  • Today we begin our "On the Road with Oregon Bounty" journey in Portland, a place well known for its food and wine. I've hung around a lot of chefs and winemakers in my time, and have a pretty good handle on food and wine pairing. There are the basics: you can go for a complement (the earthiness of Pinot noir goes great with mushrooms) or a contrast (a sweet wine to balance a salty dish), etc. Go a little deeper, and you realize the red-with-red-meat/white-with-fish dogma is rather constraining if not downright boring.   • I've recently begun approaching composers outside my usual listening material (the belcanto works of Rossini, Donizetti, Mercadante; some baroque music), and this move proved to be a quite worthwhile one, as I've discovered (and am still discovering) quite a bit of charm and musical invention along the way. The presented concerto was one of the first pieces that introduced me to a contemporary of the above-mentioned composers, Felix Mendelssohn. In this case, I'm using allmusic.com wonderful essay on the work to provide a suitable description of the work. Mendelssohn was good friends with the skilled German clarinetist, Heinrich Joseph Baermann, and his son, Carl Baermann, a fine clarinetist in his own right. It was a friendship built not only from shared musical interests and compatible personalities but also from the Baermanns' masterful skill as dumpling chefs (and Mendelssohn could never resist a well-made dumpling). Around Christmas 1832, the Baermanns were in Berlin (then Mendelssohn's home) for a series of performances, and Mendelssohn invited them over for an evening of dumplings. The Baermanns insisted on remuneration in the form of a piece of music for father and son to play together; thus Mendelssohn's Concert Piece No. 1 in F major for clarinet, basset horn, and piano (op. 113) was born. The exchange - dumplings and strudel for music - proved so successful and made both parties so happy, that it was repeated a little while later: thus, more dumplings for Felix and the Concert Piece No. 2 in D minor (with the same musical team in mind) (op. 114) (January 1833), for the Baermanns! Mendelssohn orchestrated the accompaniment of Op. 113 himself, but never got around to doing the same for Op. 114. He did, however, authorize the Baermanns to do it themselves (as he authorized them, in fact, to alter the solo parts in whatever manner and to whatever extent they wished), and so one this version, using an orchestra as the backdrop for the soloists' lines.   • This is my little tango version of Walking In Air from Howard Blake's The Snowman. I played this on request from a chef at the restaurant where I work because he got tired of the traditional version. visit my webpage http://www.joolsscott.co.uk "Walking in the Air" is a song written by Howard Blake for the 1982 animated film of Raymond Briggs' 1976 children's book The Snowman. In the film the song was performed by St. Paul's Cathedral choirboy Peter Auty. For the subsequent single release, which reached number five in the UK pop charts, the vocals were sung by Welsh chorister Aled Jones, who became a popular celebrity on the strength of his performance. Jones' version was not an official The Snowman tie-in though it was authorised by Howard Blake. "Walking in the Air" has subsequently been covered by several different artists, in a variety of styles. The song forms the centrepiece of The Snowman, which has become a seasonal perennial on British television. The story relates the fleeting adventures of a young boy, and a snowman who has come to life. In the second part of the story, the boy and the snowman fly to the North Pole. "Walking in the Air" is the theme for the journey. They attend a party of snowmen, at which the boy is the only human. They meet Father Christmas and his reindeer, and the boy is given a scarf with a snowman pattern. The song has remained so popular that a parody version of it was used in a British television commercial in 2006, for an Irn-Bru advert in which the slightly edited song tells the story of a boy and a snowman flying through Edinburgh, over Loch Ness, and over Glasgow. In the commercial, the snowman drops the boy into the snow near George Square after the boy refuses to give the snowman a taste of the drink. Andrew Johnston performs a duette of the song with Faryl Smith on his 2008 album One Voice Aled Jones (Boy Soprano) and Aled Jones (Adult Baritone) as part of his 2007 Album You Raise Me Up-The Best of Aled Jones Angelis 2006 Barry Manilow & Celine Dion did a duet rendition

  • Knife sharpening is a skill that every home cook should learn. How many times have you picked up a knife that was so dull that you couldn't even slice a tomato? Chef Jason Hill shows you a quick easy way to sharpen your knife because using a sharp knife is not only easier, but it's a lot safer. There are many sharpening products out there, but I like to use a sharpening stone to bring back that edge to my knife. There are also several times of sharpening stones. I like a water stone because they are smoother and really put a fine edge on your blade. Before you start sharpening you always want to set your stone on a wet paper towel or dish towel. This keeps it from moving around while you sharpen. First, pour a little water on the stone, and cover the stone. Once you've coated the stone with a little bit of water, I put the tip of my knife onto the stone at a 20 degree angle. I run the knife all the way along the length of the stone from tip to heel. Turn the knife over and do the same process. You may need to do this quite a few times depending on how dull your blade is. You may only need to do this about once a month. A knife steel is what really keeps your blade true and honed. That's sharp! Now I've seen sharpening stones priced at anywhere between $10 and $100. I paid about $25 for mine about five years ago. These are going to last a lifetime in your kitchen. Practice this a few times. Once you get it down, you'll be glad you did!
